Townsend Creamery's Trailhead cheese, you know how wonderful it is and have probably been missing it since it went out of production. Well....the exciting news is~~we have a wheel that we have held onto and are anxious to share with all of you!!! For those of you who are not familiar with Mt. Townsend's Trailhead it is an award winning pasteurized cow's milk Tomme cheese with a natural rind, semi-firm. Flavors are initially mild, becoming slightly more intense as the cheese remains in your mouth. There are sweet and pleasantly tangy notes, accompanied by an earthy, cellar-like aroma. It was originally aged between 60-90 days before release. We have held onto our wheel for a special occassion as it will not be back into production again for a couple more years. So....our wheel has now been aged for about 8 months. Should be interesting & exciting to see how it tastes. ARE YOU IN?
