Turkey Wraps With Chutney And Peanuts
Makes 4 servingsOlé for tortillas! They’ve revolutionized the sandwich world. Turkey leftovers will be happily consumed in wraps that the whole family will enjoy.½ cup mayonnaise ½ cup mango chutney (see Tip)
1 tablespoon curry powder
Salt and pepper to taste
4 (10-inch) flour tortillas or spinach flour tortillas
8 ounces cooked turkey or rotisserie chicken (or 16 thin slices deli turkey), coarsely chopped
½ cup coarsely chopped fresh cilantro
½ cup coarsely chopped lightly salted peanuts
2 cups coleslaw mixStir together the mayonnaise, chutney, curry powder, salt, and pepper in a small bowl.
For each wrap, spread ¼ cup of the mayonnaise mixture on a tortilla. In a 2-inch-wide strip down the center of the tortilla, layer one-fourth of the turkey, cilantro, peanuts, and coleslaw mix.Fold the sides of the tortilla over the ends of the filling, and then roll up burrito-style to enclose the filling. Slice in half diagonally.
